Chitosan is a linear polysaccharide, and it's extracted by treating the chitin shells of shrimp and other crustaceans with an alkaline material, similar to sodium hydroxide. Chitosan is an amino polysaccharide polymer commercially manufactured from the shells of crabs, lobster, shrimp, and crayfish. It's produced through chemical or enzymatic deacetylation of chitin shells or exoskeletons of insects, crustaceans, and the cell walls of fungi with an alkaline material similar to sodium hydroxide. Each raw material for the product has specific chitosan content hence playing a major role in commercial manufacturing. Shrimp is a significant source of chitosan since it contains around 25 to 40 chitin, whereas, the crab shell contains around 15 to 20. Chitosan has several commercial and viable biomedical uses.
